Adobo Fried Rice

Here is the second post in my series. It’s not quite a fusion dish; but I wanted to show you that Adobo cannot be limited to just something you eat at lunch or dinner. Today’s recipe is something I grew up eating for breakfast many a- time. 

If you happen to have leftover Adobo (unlikely in our house, so I typically double up the recipe so I can have leftovers), you can quickly whip this dish up. It can be eaten alone, as it is absolutely flavorful; or if you want a burst of flavor, try the fried tofu for a pulutan side. 

Pulutan literally means “snack” which reminds me of something you eat with a beer in hand, around a table with friends on a random evening after receiving a text “Kamusta, ano gawa mo? (How are you, what are you up to?)”. Filipinos are laid back and they don’t build their lives around routine and schedules, instead they build their lives around their family, friends and community- it’s not a surprise that they are well- loved among their non- Filipino friends. Food is central to the culture, and you’d often go home feeling stuffed, with a bag of take home containers. Snacking in a Filipino household blurs the lines between meal times, so you can chuck your meal plan, serve this up for dinner on your next breakfast- for- dinner- just like our family does.

Adobo Fried Rice

Fried Rice:

Yield: 8 servings

Prep Time: 5 mins

Cook Time: 10 mins

Total Time: 15 mins

Ingredients:

10 oz leftover adobo, your choice of protein

6 cups of cooked rice, fluffed

½ garlic bulb, minced

¼ cup neutral oil (canola, vegetable, etc)

Instructions:

On medium-high heat, fry garlic in oil. When garlic is fragrant and golden, add rice and stir until well combined. 

Add adobo (including that sauce), and stir until well combined. 

If you’d like to crisp up the rice a bit more, feel free to continue frying on medium heat until you get the crunchy bits from the bottom of a pan. The trick is to stir from the bottom of your skillet every minute or so, so your rice doesn’t burn, turning them over to the top. 

Fried Tofu “Pulutan”

Yield: 4 servings

Prep Time: 10 minutes

Cook Time: 5 minutes

Total Time: 15 minutes

Ingredients:

One package fried tofu

½ cup soy sauce

½ cup white vinegar

2 roma tomatoes, chopped

1 bunch green onions, chopped

¼ red onion, chopped

1 jalapeno, chopped

Instructions:

Air fry tofu for 5-7 minutes at 350 degrees Fahrenheit. 

Combine the rest of the ingredients in a bowl. 

Soak air fried tofu in sauce before serving. Serve immediately.

To serve:

Sunny side up egg, optional
